I just spilled my little bit of blue Mountain Dew that i had left and was savoring as long as possible! What does that have to do w/ cooking for 1 person? I don't know just that sometimes thats the way things go in life. I am always spilling and dumping and breaking things. And every time I drop something heavy @ my house I'm scared i'll crack the flooring...I would not enjoy replacing a piece because i know what it would take to do that....pulling one piece up at at time. Really not my idea of fun...just sayin'...
Anyway, to the subject at hand...I have often wondered how i'd ever learn to cook for less then 11 people. I mean, that's how I've been used to for the last several year...and when people go on trips or there's some missing it was always a pain to figure out how much i would need so usually i just made about the normal amount if i was the one doing the cooking/baking.
But, suddenly I have had to learn to not just cook for 5 or 6 but 1! Talk about a switch...so i put my thinking cap on and began to figure this out...I looked online (pinterest of course) to ideas for one person and a few thing like that. I have been able to come up w/ a few things that are quick and easy to pull out of the freezer and stick in the Crockpot and they are done when i come home from the barn. Oh, that was another thing to deal with....i milk most afternoons and it's not convenient to come home and make supper...and the clock quite on the stove i'm using to time bake is not happening...I was glad to find a small Crockpot at a yard sale for less then $4 (i got a book or 2 and a jar w/ that) So what do i make you are probably wondering...
Well, first off i bought a 10 lbs bag of leg quarters and froze them individually (haven't used those yet). I also bought some boneless, skinless thighs, ground chuck, and hot dogs. I bought the ground chuck w/ meat balls in mind. I made them up and froze them on a pan and then put them in a bag so they froze separately. Then while i was making the meat balls i had some extra meat and got the brilliant idea to make some Mock Ham Loaves! So i went and got some hot dogs and made 9 little loaves with my LB of chuck i had left from the balls.
An idea i found online...pinterest...was lasagna rolls. I'd been thinking about doing lasagna and then somehow cutting it up and putting it in individual containers to pull out and warm up quick...but ran outa containers...so one day i was looking around and i found Lasagna Rolls instead! it worked great! Although next time i need to use more noodles w/ the amount of filling...look them up...they are so easy! It didn't call for meat but Marcia had given me fixin's for spaghetti which was WAY too much for me so i froze the leftover sauce w/ the meat in it and then when i want to have some lasagna rolls i just pull out a roll and thing of sauce...throw it in a smaller container then the Crockpot (it's small just still kinda too big) and let it cook away while i'm out milking those bovines!
I also cheated and bought some pre-manufactured chicken strips and a few other things but the aren't that great....I think i'll stick to my chicken that i bought. Another day i was in town and found some steaks on clearance and i made stew with potatoes and carrots from that one day. It was very good!
A box of Ice Cream lasts a year and a day.....well, that's a slight exaggeration...but i bought 3 boxes just before i moved in and have been eating one of them...cookies and cream...ever since....last night i pulled it out and it was still over half full! After church Gwynndon and Andrea came over and we had icecream and now the box it empty! the little pigs anyway! ha! :-)
So there...that's what's been running thru my head that last several days! and now i need to get back to work on the 50-11 things that are still staying me in the face! after about 6 months of practically no orders for sign stuff i now have several! all within several weeks time! and instead i've been making extras to fill up the office again! i have a lot of boards precut and so was trying to shove those thru really quick like...but i really need to get a move on the others! One of them is a new thing for me...routering the letters into boards! ack! scary! Ryan had templates to I'm borrowing them from him and using dad's router...should i get my own equiptment maybe? IDK....nobody else uses this stuff very often! :-) its gonna rot sitting back there not being used! hehe!
The other night i woke up to a funny noise....and couldn't identify it until i went in search.....here there was a mouse in the house! nawing away at a pecan in a drawer i hadn't gotten cleaned out cause I'm not really sure i'm gonna keep the piece of furniture...needless to say the drawers are now cleaned out and there is a mouse trap set and the brother has been informed that he HAS to get the house Mouseproof....even if he doesn't get ANYTHING else done! :-) EEK! I don't like those cute little beady eyed things! shivers violently....
